Jacket Potato Mice
Ingredients
- 4 baking ZENXIN Organic Potatoes (large), scrubbed
- 60 g medium-hard cheese, cut into pieces (e. g. Cheddar)
- 20 g butter
- 6 fresh ZENXIN Organic Chives, snipped (1 cm)
- 30 g ZENXIN Organic Carrots, sliced (4 mm)
- 12 frozen green peas, defrosted
- 6 spaghetti strands, broken into 3 cm lengths, for garnish
Methods
- Preheat the oven to 200°C and line a baking tray with foil.
- Slice approx. 5 mm off the top of each potato then cut a cross into potato flesh without cutting the skin. Place prepared potatoes onto a baking tray and bake for 50-60 minutes (200°C).
- Using an oven glove to hold the potato, spoon out flesh, leaving about 1 cm of flesh on skin so the potato holds its shape.
- Transfer potato flesh to a mixing bowl, and mix it with butter, chives and grated cheese.
- Spoon potato mixture back into skins then garnish with carrots for ears, peas for eyes and nose and spaghetti for whiskers.
- Return to the oven to warm through for 10 minutes (200°C). Serve hot.
