Glutinous Millet Dumplings
Ingredients
Sticky Millet:
- 2 cups Organic Glutinous Millet, soaked for 30 mins
- 1 tbsp SN Organic High Oleic Sunflower Oil
- 3 cloves Organic Morado Garlic, minced
- 1 small Organic Onion, diced
- 1/2 tsp SN Himalayan Salt
- 1 tbsp SN Soy Sauce
- 1/2 tbsp SN 5 Spice Powder
- 1 tsp Sesame Oil
Bamboo Wrap:
- 20-30 pieces Bamboo leaves, soaked overnight
- 20-30 pieces Hemp Strings, soaked overnight
Fillings:
Beans:
- 1/2 cup SN Black Eyed Beans, soaked for 1 hour
- 1 tbsp SN Soy Sauce
- 1 tbsp Sesame Oil
Mushrooms:
- 1 cup SN Organic Brown Shiitake Mushrooms, sliced
- 1/2 tbsp SN Soy Sauce
- 1 tbsp Sesame Oil
- A pinch of SN Organic White Pepper
Soya Fish Chips:
- 1 piece Soya Fish Chip (150g)
- 1 tbsp SN Soy Sauce
- 1 tbsp Sesame Oil
Methods
- Begins by preparing the fillings. Firstly, boil the beans in a pot of water for approximately 1 hour until the beans are about 80% soft. Once done, drain and stir fry with soy sauce and sesame oil. Set aside.
- Next, stir fry the mushrooms with soy sauce, sesame oil and pepper; then set aside. Repeat this step with soya fish chip.
- Proceed with the sticky millet next. Wash the millet until the water runs clear and drain the excess water, set aside.
- In a hot pan, sauté garlic and onions with the sunflower oil until the garlic turns golden brown and onions are translucent. Next, add in glutinous millet and the remaining ingredients and stir fry until fragrant (approximately 5-10 minutes).
- Now, we’re ready to wrap! Wipe bamboo leaves to ensure its clean and dry. To begin wrapping your dumpling, overlap 2 bamboo leaves and fold it into a cone.
- Fill the bottom of the cone with 1 tbsp of millet, followed by 1 tbsp of beans, mushrooms and 1/2 tbsp of soya fish chip.
- Next, cover the filling with glutinous millet and wrap over the bamboo leaves to form a pyramid a secure with hemp string. Repeat until all the millets and fillings are used. You should get about 10-15 dumplings.
- In a large stock pot, boil the millet dumplings fully submerged in water for 1-1.5 hours.
- Once done, remove the dumplings from the water. Hang in up to air dry for at least 1 hour before it is ready to be eaten. Enjoy!
